Nutty Fruit Bliss: A Sugar-Free Energy Dessert

Ingredients

1/2 cup mixed nuts (almonds, walnuts, cashews), roughly chopped
1/4 cup sunflower seeds or pumpkin seeds
1/2 cup dried apricots, chopped
1/2 cup dried cranberries or raisins
1/4 cup dried figs, chopped
1 cup plain Greek yogurt
1/2 cup cottage cheese
1/2 tsp vanilla extract
1/4 tsp ground cinnamon
A pinch of salt
Fresh mint leaves for garnish (optional)

Instructions

Prepare the Dried Fruits and Nuts: In a medium bowl, combine the chopped dried apricots, cranberries or raisins, and dried figs. Add the mixed nuts and seeds, stirring well to distribute the ingredients evenly.

Make the Creamy Base: In a separate bowl, mix the Greek yogurt, cottage cheese, vanilla extract, ground cinnamon, and a pinch of salt until smooth and creamy.

Assemble the Dessert: Layer the creamy yogurt and cottage cheese mixture in serving glasses or bowls, alternating with the dried fruit and nut mix. Start with a layer of the creamy base, then add a layer of the fruit and nut mixture, and repeat until all ingredients are used up. Finish with a final layer of the fruit and nut mixture on top.

Chill and Serve: Refrigerate for at least 30 minutes to allow the flavors to meld together. Serve chilled, garnished with fresh mint leaves for a burst of freshness, if desired.
