Amish Onion Fritters: A Taste of Tradition

Ingredients

1 tablespoon sugar
1 tablespoon baking powder
1 cup all-purpose flour
1 teaspoon salt
2 teaspoons ground black pepper
1 teaspoon garlic powder
3/4 cup whole milk
2 1/2 cups chopped onions (about 2 large onions)
Oil for frying

Instructions

Mix the Batter:

In a large bowl, whisk together the flour, sugar, baking powder, salt, pepper, and garlic powder.
Gradually pour in the milk, stirring until the mixture is smooth and free of lumps.
Incorporate the Onions:

Gently fold in the chopped onions, ensuring they are well coated with the batter.
Heat the Oil:

Pour about 1/2 inch of oil into a large skillet. Heat over medium-high heat until the oil reaches 350°F (175°C). To test, drop a small bit of batter into the oil; if it sizzles and rises, the oil is ready.
Fry the Fritters:

Carefully drop spoonfuls of the onion batter into the hot oil using a spoon or small scoop.
Fry each side for about 2-3 minutes, or until golden brown and crisp.
Remove fritters with a slotted spoon and place on a paper towel-lined plate to drain excess oil.
