Cucumber and Tomato Cream Salad with a Tangy Vinaigrette

Ingredients

4 large tomatoes, quartered at an angle
2 large cans of crushed tomatoes
2 large cucumbers, thinly sliced
1 cup crème fraîche
2 tablespoons olive oil
1 tablespoon white wine vinegar
1 teaspoon Dijon mustard
Salt and pepper, to taste
Fresh dill or basil, for garnish

Instructions

Prepare the Vegetables:
Begin by draining the crushed tomatoes and setting them aside. Quarter the fresh tomatoes at an angle and slice the cucumbers thinly.

Make the Vinaigrette:
In a small bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, salt, and pepper until well combined.

Assemble the Salad:
In a large mixing bowl, combine the crushed tomatoes, fresh tomato quarters, and cucumber slices. Pour the vinaigrette over the vegetables and gently toss to coat evenly.

Add the Crème Fraîche:
Fold in the crème fraîche, ensuring it is well distributed throughout the salad, giving it a creamy consistency.
