Sweet Tennessee Onion Fritters

Ingredients

1 cup all-purpose flour
2 large Tennessee onions, finely chopped
1/2 cup cornmeal
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon paprika
1 large egg
1/2 cup milk
2 tablespoons chopped fresh parsley (optional)
Vegetable oil for frying

Instructions

Prepare Onions: Place the chopped Tennessee onions in a bowl and set aside.

Mix Dry Ingredients: In a large mixing bowl, combine the flour, cornmeal, baking powder, baking soda, salt, black pepper, and paprika.

Combine Wet Ingredients: In another bowl, whisk together the egg and milk until well blended.

Mix Batter: Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the chopped onions and parsley if using.

Heat Oil: In a large skillet or frying pan, heat about 1/2 inch of vegetable oil over medium heat until hot.

Fry Fritters: Drop spoonfuls of the batter into the hot oil, flattening them slightly with the back of the spoon. Fry for about 2-3 minutes on each side, or until golden brown and crisp.

Drain and Serve: Remove the fritters from the skillet and drain on paper towels. Serve warm.
