Immunity-Boosting Onion and Ginger Soup

Ingredients

1-inch piece of ginger, grated
2 cloves of garlic, minced
2 onions, chopped
4 cups vegetable or chicken broth
1 tbsp olive oil
1/2 tsp turmeric powder
Salt and pepper to taste
Fresh parsley or cilantro for garnish (optional)

Instructions

Heat olive oil in a large pot over medium heat.
Add chopped onions and sauté until translucent, about 5 minutes.
Stir in grated ginger, minced garlic, and turmeric powder. Cook for another 2 minutes until fragrant.
Pour in vegetable or chicken broth. Bring to a boil.
Reduce heat and simmer uncovered for 15-20 minutes until onions are tender.
Season with salt and pepper to taste.
Remove from heat and let the soup cool slightly.
Blend the soup using an immersion blender or carefully transfer to a blender and blend until smooth.
Reheat if necessary before serving.
Garnish with fresh parsley or cilantro if desired.
