Ingredients
1 cup coconut milk
1 ripe pineapple, peeled, cored, and chopped
1-2 tablespoons honey or agave syrup (optional, depending on sweetness of pineapple)
Juice of 1 lime
Fresh mint leaves for garnish (optional)
Instructions
In a blender, combine the chopped pineapple, coconut milk, honey or agave syrup (if using), and lime juice.
Blend until smooth and creamy.
Taste and adjust sweetness if necessary by adding more honey or agave syrup.
Pour the mixture into a shallow container and freeze for at least 4 hours or until firm.
Once frozen, scoop the pineapple soft serve into bowls or cones.
Garnish with fresh mint leaves if desired.
