Ingredients
2 cups all-purpose flour
1 cup granulated sugar
1/2 cup butter, softened
3 large eggs
1/2 cup milk
1 teaspoon vanilla extract
1 tablespoon baking powder
1/4 teaspoon salt
2 medium apples, peeled and diced
1/4 cup sliced almonds (plus extra for topping)
1/4 cup dried fruit, such as raisins or prunes (optional)
For the Topping (optional):
Powdered sugar for dusting
Instructions
Preheat the Oven
Preheat your oven to 350°F (175°C). Grease a bundt pan thoroughly with butter or non-stick spray.
Prepare the Batter
In a large bowl, cream together the butter and sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition.
Mix in the vanilla extract.
Combine Dry Ingredients
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture, alternating with the milk. Start and end with the dry ingredients, mixing until just combined.
Add Apples and Almonds
Fold in the diced apples and sliced almonds (reserve a few for the top).
Assemble in the Pan
Pour the batter into the prepared bundt pan, spreading it evenly.
Sprinkle additional almonds and dried fruit on top for added texture and flavor.
Bake
Bake in the preheated oven for 45-55 minutes or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for about 10 minutes, then carefully turn it out onto a wire rack to cool completely.
Finish and Serve
Once the cake is cool, dust it lightly with powdered sugar if desired. Slice and enjoy!
Tips:
For an extra flavor twist, try adding a teaspoon of cinnamon or a pinch of nutmeg to the batter.
Serve with a dollop of whipped cream or vanilla ice cream for a delightful dessert!
Enjoy.
