1 medium onion, finely diced
2 cups cooked white or brown rice
1 lb ground beef
1 cup beef broth (or water, for a lighter option)
1 can (10.5 oz) cream of mushroom soup (or cream of cheddar soup for extra cheesiness)
1 teaspoon garlic powder
1/2 teaspoon paprika (optional, for a hint of smokiness)
Salt and pepper to taste
2 cups shredded cheese (cheddar, mozzarella, or a blend)
Instructions
Preheat Oven: Set your oven to 375°F (190°C) and prepare a medium-sized baking dish by lightly greasing it.
Cook the Beef: In a large skillet, cook the ground beef over medium heat until it’s browned. Add the diced onion and cook until it becomes soft and translucent. Drain any excess fat from the skillet.
Combine Ingredients: In a large mixing bowl, combine the cooked beef and onion mixture with the cooked rice, beef broth, cream of mushroom soup, garlic powder, paprika (if using), salt, and pepper. Stir everything together until it’s evenly mixed.
Assemble the Casserole: Pour the mixture into the prepared baking dish, spreading it evenly. Sprinkle the shredded cheese over the top to cover it completely.
