Ingredients
For the Creamy Pudding:
1/2 cup heavy cream
1/4 cup sugar
2 cups milk
3 tablespoons cornstarch
1 teaspoon vanilla extract
A pinch of salt
For the Caramelized Banana Topping:
1/4 cup brown sugar
2 ripe bananas, sliced
2 tablespoons butter
1/4 teaspoon cinnamon (optional)
Instructions
Step 1: Prepare the Creamy Pudding
In a medium saucepan, whisk together the milk, heavy cream, sugar, cornstarch, and salt until smooth.
Place the saucepan over medium heat, stirring constantly until the mixture thickens, about 5-7 minutes. It should coat the back of a spoon.
Remove from heat, add vanilla extract, and stir to combine.
Pour the pudding into individual serving cups or small glass bowls. Let it cool to room temperature, then refrigerate for at least an hour or until fully set.
Step 2: Make the Caramelized Banana Topping
In a skillet over medium heat, melt the butter and add brown sugar. Stir until the sugar melts and starts to bubble.
Add the banana slices and gently stir to coat them in the caramel sauce. Cook for 2-3 minutes, or until the bananas are soft and slightly caramelized. Sprinkle cinnamon if using.
Remove from heat and let it cool slightly.
Step 3: Assemble and Serve
Once the pudding is set, spoon the caramelized bananas on top of each pudding cup, spreading them evenly.
Serve immediately or chill in the fridge until ready to enjoy.
Tips:
For an extra touch, add a sprinkle of sea salt on top to enhance the caramel flavor.
