Ingredients
1 cup shredded cheddar cheese
2 cups broccoli florets, steamed and finely chopped
1/4 cup grated Parmesan cheese
2 eggs
1/2 cup breadcrumbs (panko or regular)
1/4 cup all-purpose flour
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
Olive oil or cooking spray for frying
Instructions
Prepare the Broccoli:
Steam the broccoli florets until tender (about 5-7 minutes). Once cooled slightly, finely chop them.
Make the Fritter Mixture:
In a large bowl, combine the chopped broccoli, shredded cheddar, Parmesan cheese, eggs, breadcrumbs, flour, garlic powder, onion powder, salt, and pepper. Stir until everything is well mixed and forms a thick batter.
Shape the Fritters:
Take a small handful of the mixture and shape it into a patty (about the size of a golf ball, then flatten it slightly). Repeat until all the mixture is used.
Cook the Fritters:
Heat olive oil in a large pan over medium heat. Once hot, add the fritters in batches, being careful not to overcrowd the pan. Cook each fritter for 3-4 minutes on each side or until golden brown and crispy.
