Banana Egg Pancake Bites

Ingredients
4 ripe bananas
4 egg yolks
Instructions
Mash the Bananas: Peel the bananas and place them in a large bowl. Mash them thoroughly with a fork until smooth and creamy.
Add the Egg Yolks: Separate the egg yolks and add them to the mashed bananas. Mix well until fully combined into a smooth batter.
Cook the Pancakes: Heat a non-stick skillet over medium heat. Lightly grease it with a small amount of butter or oil. Pour a small portion of the batter into the skillet to form mini pancakes or spread into a larger pancake.
Cook Until Golden: Let the pancake cook for 2-3 minutes on one side, then carefully flip and cook the other side until golden brown.
Serve and Enjoy: Once cooked, transfer the pancakes to a plate and let them cool slightly. Slice into bite-sized pieces and serve warm.
