2 tablespoons cold butter, cut into small cubes
1/4 cup cold water (add more if needed)

1 tablespoon poppy seeds, sesame seeds, or chia seeds
1/4 teaspoon dried herbs (such as thyme, rosemary, or oregano)
1/4 teaspoon garlic or onion powder
Instructions
Preheat the Oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper for easy cleanup.
Prepare the Dry Ingredients: In a large bowl, whisk together the flour, salt, and baking powder. Add any optional dry flavorings you desire, like herbs or seeds, to the flour mixture.
Incorporate the Butter: Add the cold, cubed butter to the dry mixture. Use your fingers or a pastry cutter to blend the butter into the flour until the mixture resembles coarse crumbs.
Add Water to Form Dough: Slowly add the cold water, a little at a time, stirring until the dough starts to come together. You may need a bit more or less water, but the goal is a smooth, cohesive dough that isn’t sticky.
Roll Out the Dough: Place the dough on a lightly floured surface. Roll it out to about 1/8-inch thick for crispy crackers.
Cut Out Shapes: Use a round cookie cutter (or any shape you prefer) to cut out crackers from the dough. Place them on the prepared baking sheet, spacing them slightly apart.
Poke Holes for Texture: Use a fork to poke small holes in each cracker. This step prevents them from puffing up too much in the oven and adds a classic cracker look.
Bake: Place the baking sheet in the oven and bake for 12-15 minutes, or until the crackers are golden and crisp.
Cool and Serve: Remove the crackers from the oven and let them cool on a wire rack. Store in an airtight container to keep them fresh.
