Ingredients
1 cup rolled oats
2 eggs
2 ripe bananas, mashed
1/2 cup milk (or a milk alternative of your choice)
1 tsp baking powder
1 tsp vanilla extract
A pinch of salt
Cooking oil or butter for greasing the pan
Instructions
Prepare the Batter: In a blender, combine the mashed bananas, rolled oats, eggs, milk, baking powder, vanilla extract, and a pinch of salt. Blend until the mixture is smooth, allowing the oats to break down into a slightly thicker batter. Let it sit for a few minutes to thicken.
Heat the Pan: Place a non-stick frying pan over medium heat. Add a small amount of cooking oil or butter to grease the pan lightly.
Cook the Pancakes: Pour about 1/4 cup of batter onto the pan for each pancake. Spread the batter gently with a spoon if needed. Cook for 2-3 minutes on one side, or until bubbles form on the surface. Flip the pancake and cook for another 1-2 minutes on the other side, until golden brown.
Serve: Remove from the pan and place on a plate. Repeat until all the batter is used. Serve warm with your favorite toppings like honey, maple syrup, fresh fruit, or a sprinkle of cinnamon.
