1/4 cup all-purpose flour (use almond flour for a gluten-free version)
2 large eggs, beaten
2 medium zucchinis, grated
1/4 cup grated Parmesan cheese (optional, for extra flavor)
2 green onions, finely chopped (optional)
Salt and pepper, to taste
1/2 teaspoon garlic powder (optional)

Instructions
Prepare the Zucchini: Grate the zucchinis, then place them in a clean kitchen towel and squeeze out as much moisture as possible. Removing the excess liquid is key to making crispy fritters.
Mix the Ingredients: In a large bowl, combine the grated zucchini, flour, beaten eggs, Parmesan cheese, green onions, salt, pepper, and garlic powder (if using). Stir well until everything is evenly incorporated.
Form the Fritters: Heat a few tablespoons of oil in a large skillet over medium heat. Scoop about 2 tablespoons of the zucchini mixture into the pan for each fritter, flattening each one slightly with a spatula to shape it into a patty.
Cook Until Golden: Cook the fritters for 3-4 minutes on each side or until they turn golden brown and crispy. Adjust the heat if necessary to avoid burning.
Serve and Enjoy: Remove the fritters from the pan and place them on a paper towel to absorb any excess oil. Serve warm with a side of sour cream, Greek yogurt, or your favorite dipping sauce.
