1 ½ cups all-purpose flour
3 large eggs
1 cup milk
½ cup Greek yogurt or sour cream
2 cups fresh spinach, chopped
1 tsp baking powder
1 tsp salt
½ tsp black pepper
1 cup shredded mozzarella cheese (divided)
1 cup shredded cheddar cheese (divided)
4 tbsp butter, cubed
Instructions
Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
Prepare the Spinach: In a large pan, sauté the chopped spinach in a little oil over medium heat until wilted, then set it aside.
Mix the Wet Ingredients: In a bowl, whisk together the eggs, milk, and yogurt until smooth and well combined.
Combine Dry Ingredients: In a separate bowl, mix the flour, baking powder, salt, and pepper.
Create the Batter: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the sautéed spinach and half of the shredded mozzarella and cheddar cheese.
Assemble the Dish: Pour the batter into the prepared baking dish, spreading it evenly. Sprinkle the remaining cheese over the top, then dot the top with the cubed butter.
Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Cool and Serve: Let the cheesy spinach bake cool for a few minutes before cutting it into squares. Serve warm for the best texture and flavor.
