Instructions
Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan.
Mix the dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
Cream the butter and sugar: In a separate large bowl, beat the softened butter and sugar together using a hand mixer or stand mixer until light and fluffy, about 2-3 minutes.
Add the eggs: Beat in the eggs one at a time, ensuring each is well combined. Stir in the vanilla extract.
Incorporate the sour cream: Gradually add the sour cream (or yogurt) and mix until smooth.
Fold in the dry ingredients: Slowly add the flour mixture to the wet ingredients, mixing just until combined. Be careful not to overmix.
Add the peaches: Gently fold in the chopped peach slices, ensuring they are evenly distributed throughout the batter.
Bake: Pour the batter into the prepared baking pan and smooth the top with a spatula. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
Cool and dust: Allow the cake to cool completely in the pan. Once cooled, dust the top with powdered sugar.
