Ingredients
1 cup sugar
1 cup creamy peanut butter
1 cup light corn syrup
6 cups crispy rice cereal (like Rice Krispies)
1½ cups semi-sweet chocolate chips
1½ cups butterscotch chips (optional for added flavor)
Instructions
Prepare the base:
In a medium saucepan over medium heat, combine the sugar and corn syrup. Stir continuously until the mixture starts to bubble, about 3-5 minutes.
Remove from heat and immediately stir in the peanut butter until smooth.
Combine with cereal:
Pour the peanut butter mixture over the crispy rice cereal in a large mixing bowl. Stir until the cereal is fully coated.
Press into the pan:
Lightly grease a 9×13-inch baking dish, then press the peanut butter cereal mixture evenly into the bottom of the dish.
Make the chocolate topping:
In a microwave-safe bowl, melt the chocolate chips (and butterscotch chips, if using) in 30-second intervals, stirring in between, until fully melted and smooth.
Assemble:
Pour the melted chocolate mixture over the cereal base, spreading it evenly with a spatula.
Chill and serve:
Refrigerate the bars for about 30 minutes to an hour, or until the chocolate has set.
Once firm, cut into squares and serve.
