1 carrot
2 potatoes
1 zucchini (courgette)
2 eggs
2 tablespoons flour
2 tablespoons olive oil

Instructions
Prepare the Vegetables:
Start by peeling the potatoes and carrot. Grate the potatoes, carrot, and zucchini.
Place the grated vegetables in a clean cloth or paper towel and squeeze out any excess liquid.
Make the Fritter Mixture:
In a large bowl, combine the grated vegetables, eggs, flour, and salt. Mix well until all ingredients are evenly distributed.
Cook the Fritters:
Heat the olive oil in a large skillet over medium heat.
Scoop out about 2 tablespoons of the mixture per fritter and place it in the skillet. Flatten slightly with a spatula.
Cook each fritter for about 3-4 minutes on each side, or until they are golden brown and crispy.
Serve:
Once cooked, transfer the fritters to a plate lined with paper towels to absorb any excess oil.
