Citrus-Infused Oatmeal Muffins

Ingredients

1/2 cup whole wheat flour
1/2 cup orange juice (freshly squeezed)
1 cup rolled oats
1/4 cup honey or maple syrup
1/4 cup coconut oil or melted butter
1/2 cup Greek yogurt
1/2 teaspoon orange zest
1/2 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/4 teaspoon baking soda
Pinch of salt

Instructions

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
In a large bowl, mix together the oats, whole wheat flour, baking powder, baking soda, cinnamon, and salt.
In another bowl, whisk together the orange juice, honey (or maple syrup), coconut oil, Greek yogurt, and orange zest.
Combine the wet and dry ingredients, stirring until just mixed. Avoid overmixing.
Spoon the batter evenly into the muffin tin, filling each cup about 2/3 full.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
