Ingredients
4 tablespoons butter
1 lb steak (such as sirloin or ribeye), cut into bite-sized cubes
Salt and black pepper, to taste
4 cloves garlic, minced
1 teaspoon fresh thyme leaves (optional)
1 lb potatoes (Yukon Gold or Russet), peeled and quartered
1/2 cup milk
1/2 cup shredded cheddar cheese
Chopped parsley, for garnish
Instructions
Prepare the Steak Bites:
Season the steak cubes generously with salt and black pepper.
In a large skillet, melt 2 tablespoons of butter over medium-high heat.
Add the minced garlic and sauté for about 1 minute until fragrant.
Add the steak cubes to the skillet and cook for 3-4 minutes, stirring occasionally, until they are browned on all sides and cooked to your desired doneness.
Optional: Stir in fresh thyme leaves during the last minute of cooking. Remove the steak bites from the skillet and set aside.
Make the Cheesy Smashed Potatoes:
In a large pot, cover the quartered potatoes with water and add a generous pinch of salt.
Bring the water to a boil, then reduce the heat to medium and simmer the potatoes for 15-20 minutes, or until they are tender when pierced with a fork.
Drain the potatoes and return them to the pot.
Add the remaining 2 tablespoons of butter and milk to the potatoes. Use a potato masher or fork to smash the potatoes until creamy and well combined with the butter and milk.
Stir in the shredded cheddar cheese until melted and incorporated into the potatoes. Season with additional salt and pepper to taste.
