Savory Cabbage and Egg Skillet

Ingredients

1 small onion, finely chopped
2 cloves garlic, minced
1 small head of cabbage, shredded
3 large eggs
2 tablespoons olive oil
Salt and pepper to taste
Optional: 1/4 cup grated cheese, 1 tablespoon soy sauce

Instructions

Prepare the Ingredients: Shred the cabbage and finely chop the onion. Mince the garlic.

Sauté Vegetables: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook for about 2-3 minutes until softened. Add the garlic and cook for another minute until fragrant.

Cook the Cabbage: Add the shredded cabbage to the skillet. Cook, stirring occasionally, for about 5-7 minutes until the cabbage is tender and slightly caramelized. Season with salt and pepper to taste. If using soy sauce, add it now.

Add the Eggs: Crack the eggs into a bowl and beat them lightly. Push the cabbage mixture to one side of the skillet. Pour the beaten eggs into the empty side of the skillet. Let the eggs cook for about 1-2 minutes, stirring gently to scramble them.

Combine and Finish: Once the eggs are cooked through, mix them with the cabbage. If desired, sprinkle grated cheese over the mixture and let it melt slightly.

Serve: Taste and adjust seasoning if necessary. Serve hot, either on its own or with a side of crusty bread.
