Crispy Potato Croquettes: A Golden Delight

Ingredients

1/2 teaspoon garlic powder (optional)
2 cups mashed potatoes, cooled
Salt and pepper, to taste
1/4 cup grated Parmesan cheese (optional)
1 cup all-purpose flour
2 eggs, beaten
1 cup breadcrumbs
Oil, for frying

Instructions

Prepare the Mashed Potatoes:

In a large bowl, combine mashed potatoes with salt, pepper, garlic powder, and Parmesan cheese (if using). Mix until well incorporated. Allow the mixture to cool completely.
Shape the Croquettes:

Scoop out portions of the mashed potato mixture and shape them into cylinders or balls, about 2 inches in length.
Coat the Croquettes:

Prepare three shallow bowls. Place flour in the first bowl, beaten eggs in the second bowl, and breadcrumbs in the third bowl.
Roll each potato cylinder in the flour until well coated, shaking off any excess.
Dip the floured cylinder into the beaten eggs, ensuring it’s thoroughly coated.
Roll the egg-coated cylinder in breadcrumbs, pressing gently to adhere. Repeat with the remaining croquettes.
Fry the Croquettes:

In a deep skillet or frying pan, heat oil over medium-high heat until it reaches 350°F (175°C).
Carefully place the coated croquettes into the hot oil in batches, without overcrowding. Fry until golden brown and crispy, about 3-4 minutes, turning occasionally to ensure even cooking.
Using a slotted spoon, transfer the fried croquettes to a plate lined with paper towels to drain excess oil.
