Ingredients
1/2 cup granulated sugar
1 tbsp baking powder
1/2 tsp baking soda
2 cups all-purpose flour
1/2 tsp salt
1 cup buttermilk
1/3 cup melted butter
2 large eggs
1 tsp vanilla extract
1 cup fresh or frozen berries (optional)
1/2 cup chopped nuts (optional)
Zest of one lemon or orange (optional)
Instructions
Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or line with parchment paper.
In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
In another bowl, whisk together buttermilk, melted butter, eggs, and vanilla extract until smooth.
Pour wet ingredients into dry ingredients. Stir gently until just combined. Fold in berries, nuts, or citrus zest if using.
Pour batter into prepared loaf pan, spreading evenly.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
