Ingredients
2 tablespoons olive oil
4 medium russet potatoes
Salt and pepper to taste
Optional toppings: butter, sour cream, chives, shredded cheese, bacon bits
Instructions
Preparation:
Thoroughly wash and scrub the potatoes.
Dry them with a paper towel.
Seasoning:
Rub each potato with olive oil.
Sprinkle with salt and pepper to taste.
Wrapping:
Cut a piece of aluminum foil large enough to wrap each potato individually.
Place each potato in the center of a foil sheet and wrap it tightly.
Cooking:
Arrange the foil-wrapped potatoes at the bottom of your slow cooker.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender when pierced with a fork.
Serving:
Carefully remove the hot potatoes from the slow cooker.
Unwrap the foil and make a slit in the top of each potato.
Add your favorite toppings and serve immediately.
