Sweet Blueberry Biscuits

Introduction

Ingredients
For the Biscuits:
2 cups all-purpose flour
1 cup cold milk
⅓ cup sugar
5 tablespoons cold or frozen butter
4 teaspoons baking powder
Pinch of salt
1 cup fresh or frozen blueberries
For the Sweet Glaze (Optional, but highly recommended!):
1 cup powdered sugar
2 tablespoons milk
½ teaspoon vanilla extract
Instructions
1. Preheat & Prep the Dough:
Preheat oven to 425°F (220°C).
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
2. Cut in the Butter:
Grate the cold or frozen butter into the flour mixture using a box grater, OR cut it into small cubes and use a pastry cutter or fork to mix until the texture is crumbly.
Gently fold in the blueberries.
3. Add the Milk & Form the Dough:
Pour in the cold milk and stir until just combined—do not overmix (the dough should be slightly sticky).
Turn the dough out onto a lightly floured surface and gently knead it 2–3 times to bring it together.
4. Shape & Cut the Biscuits:
Roll or pat the dough into a ¾-inch thick rectangle.
Use a biscuit cutter or a floured glass to cut out biscuits and place them on a parchment-lined baking sheet.
Brush the tops lightly with melted butter for extra golden color.
5. Bake the Biscuits:
Bake for 12–15 minutes, or until golden brown on top.
6. Make the Sweet Glaze (Optional but Delicious!):
In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
Drizzle the glaze over the warm biscuits for a sweet finishing touch!
Tips for Success:
Extra Flaky Biscuits? Keep all ingredients cold, especially the butter!
Fresh vs. Frozen Blueberries? If using frozen, do NOT thaw them—this prevents color bleeding.
Storage: Store in an airtight container at room temperature for up to 2 days, or refrigerate for 5 days. Reheat before serving!
