Kielbasa Soup

Ingredients:
1 tablespoon olive oil or butter
1 pound kielbasa, sliced into rounds
1 medium onion, diced
2 cloves garlic, minced
2 carrots, peeled and sliced
2 celery stalks, sliced
4 medium potatoes, peeled and diced
4 cups chicken broth
1 cup heavy cream or milk (optional for creamy soup)
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
1/2 teaspoon black pepper
Salt to taste
Fresh parsley or green onions for garnish
Instructions:
Brown the Kielbasa:
Heat the olive oil or butter in a large pot over medium heat.
Add the sliced kielbasa and cook for 4–5 minutes, or until browned. Remove and set aside.
Sauté Vegetables:
In the same pot, add the onion, carrots, and celery. Sauté for 5–7 minutes, or until softened.
Add the minced garlic and cook for 1 minute until fragrant.
Add Potatoes and Broth:
Stir in the potatoes, chicken broth, smoked paprika, thyme, and black pepper. Bring the mixture to a boil.
Simmer:
Reduce the heat to low, cover, and simmer for 20–25 minutes, or until the potatoes are tender.
Blend for Creaminess (Optional):
If you prefer a creamier texture, remove about 2 cups of the soup, blend it, and return it to the pot. Alternatively, use an immersion blender for partial blending.
Add Kielbasa and Cream (Optional):
Stir the browned kielbasa back into the soup. If using, add the heavy cream or milk and simmer for 5–7 more minutes to heat through.
Serve:
Taste the soup and adjust the seasoning with salt if needed.
Ladle into bowls and garnish with fresh parsley or green onions.
